Dreaming and (hopefully) Doing...but mostly dreaming

I am a girl who loves a challenge - to have a goal.  Except not a big one, because that's hard.  (You wouldn't believe how many goals end up in the hard category - ha!)

I am also the type that, since I was a teenager,  had this obsession with collecting recipes, printing tutorials (or copying them out of library books), and cutting out workout routines or design or garden ideas from magazines -for later use-

This would, about every six months or so, lead me to a big time clean out of the papers and folders  piled by and under my bed/nightstand/various bags and file folders.  It became a paper hoarding mess, and I almost never got around to actually making/doing any of those things.

And then there was Pinterest.  Oh my goodness, it had to have been invented for me. I can collect and categorize clever ideas and resources and it's all in one place and it doesn't clutter up my house!  Wahoo!  The resources seem endless and I purposely carve out moments in my day to find inspirational images/websites which will inspire me to create and learn and be absolutely, brilliantly lovely!

Except, I hardly get around to it -the actual follow through. I carve out the time for looking, but not so much the time for doing.

And so, here I go again.  I'm going to use my blog to do a weekly Pinterest challenge.  Kind of like when I used to do Wednesday's Whetting...

But first, I would like to share a few of the ideas I've tried and tested, that are part of my Pinterest collection...

SHREDDED BEEF TACOS:
These were A.MAY.ZING.  Simple, easy and good.  It will become a family staple, for sure.

 BAKED FRIED CHICKEN:

These tasted really good (great seasoning), but were not at all crispy.  I noticed this was true for a lot of folks, based on comments on the recipe-givers blog.  Still, it will be worth another try.

TOMATO, PESTO  & MOZARELLA GRILLED CHEESE:

I had such high hopes for these, but they weren't what I imagined.  I think I used too much pesto, and next time I will use Sourdough Bread (instead of rye) and really fresh, good mozarella (not the block-cheese kind).  I'm guessing that will make this what I hoped they would be.  It was good enough to try it again.

ROASTED SMASHED NEW POTATOES:

A huge hit.  And pretty easy.  You get the creaminess of a mashed potato, but the crunchiness too.  I made some changes, like using butter along with the olive oil and a little garlic salt.  This will be a regular at our house.  We eat lots of potatoes around here. This is a welcome and tasty change of pace.

I have more.  I will post my challenge tomorrow.
Yay for Pinterest!
